Chickpea Stew


This stew is a hug in a bowl. This stew has a perfect blend of spices that comfort you and warm your soul. It is fully of hearty vegetables and beans making it filling and the perfect meal to curl up and eat by the fire. This recipe doesn't require a ton of hands on work which is great. You basically dump all of your ingredients in a large pot and let it simmer until all those flavors combine and start giving off a delicious aroma. My favorite part of this stew is that its made using pantry staples. All you need are a couple basic vegetables, vegetable broth, some spices, and a big bowl.

INGREDIENTS:

2 15 oz. chickpea cans (drained and thoroughly rinsed)

4 tablespoons olive oil

4 cups vegetable broth

1 14 oz. can diced tomatoes

1/2 red bell pepper (diced)

1 sweet potato (cubed)

1 onion (diced)

5 garlic cloves (diced)

2 tablespoons fresh ginger (roughly chopped) or 1 teaspoon ground ginger

1 tablespoon garam masala

1 teaspoon turmeric

1/4 teaspoon cumin

1 teaspoon curry powder

1/2 teaspoon chili powder

A couple handfuls of frozen or chopped kale (optional)

Salt (to taste)

Pepper (to taste)

Cilantro (optional, for topping)

Yogurt (optional, for topping)

Lemon juice (optional, for topping)

Chili flakes (optional, for topping)


RECIPE:

  1. Start by heating up your oil in a large pot. Add in your onions, peppers, and turmeric and sauté for 2-4 minutes, or until the onions turn light pink, stirring occasionally. Then add in your garlic and ginger. Cook for another 2 minutes, stirring occasionally. Add some salt.

  2. Add in your chickpeas, sweet potato, vegetable broth, tomatoes, garam masala, cumin, curry powder, pepper, and chill powder. Mix everything together and let it simmer, half covered for 20-30 minutes.

  3. After about 25 minutes, the stew should start to thicken. At this point, taste to see if it needs more salt or other seasonings. Add in your kale and cover the pot. Let it cook for about 5 minutes. Taste to see if it needs any seasoning. Serve warm and top with some yogurt, lemon juice, cilantro, and chili flakes.
