Ginger Spiced Loaf Cake


I'm all for the ginger spice flavors, however, ginger bread cookies really aren't my thing. Sure, I'll decorate a gingerbread house, but I'm not a fan of the cookies themselves, which is why I came up with this Ginger Loaf Cake. It captures all of those ginger spice flavors from your classic cookie, and puts them in a cake form. It's moist, sweet, and spiced well, making it perfect for the holidays this year. This loaf is one of my favorites because of how easy it is. All you do is mix your ingredients in one bowl and bake! Then while it bakes, you can whip up its maple glaze in about 2 seconds and then drizzle it all over the bread once it comes out of the oven.

INGREDIENTS:

Loaf:

1 3/4 cup flour

3/4 cup brown sugar

3/4 cup unsweetened apple sauce

1/4 cup yogurt

1/4 cup olive oil

1 teaspoon baking soda

1 teaspoon baking powder

2 teaspoons ground ginger

1 teaspoon cinnamon

1/4 teaspoon of the following: ground nutmeg, ground cardamom, ground cloves

1 teaspoon vanilla

Zest of one orange (optional)

1/4 cup walnuts (optional)

Pinch of salt

Glaze:

1/2 cup powdered sugar

2 tablespoons maple syrup


RECIPE:

  1. Preheat your oven to 350° F and line a loaf pan with parchment and spray it with cooking spray.

  2. Combine your sugar, apple sauce, yogurt, oil, and vanilla in a bowl.

  3. Add in your flour, baking soda, baking powder, spices, salt, orange zest and mix until just combined. Fold in your walnuts.

  4. Pour the batter into the loaf pan and bake for 45 minutes at 350°F. Use a toothpick to check if it is done, if not, then lower the heat to 300°F for 7-10 minutes.

  5. While the loaf bakes, make the glaze by combining the powdered sugar and maple syrup. Once the loaf comes out of the oven, let it cool for 20 minutes and then pour over the glaze.

NOTES: Make this recipe vegan by substituting yogurt for apple sauce.
