Banana Muffins


These are some life changing banana muffins. They’re moist, fluffy, and super banana-y. Each bite melts in your mouth. The oat topping adds a layer of crispiness and is so good.

TOTAL TIME: 40 minutes

SERVINGS: 12 muffins


INGREDIENTS:

Muffins:

1 3/4 cup all purpose flour

3 mashed bananas

1/4 cup yogurt

1/4 cup softened or melted butter (half a stick)

1 teaspoon baking soda

1 teaspoon baking powder

3/4 cup brown sugar

1 teaspoon vanilla

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/4 cup chocolate chips (optional)

1/4 cup walnuts (optional)


Oat topping:

1/2 cup melted butter (1 stick)

1/2 cup flour

1/2 cup brown sugar

1/2 cup rolled oats

1/2 teaspoon cinnamon

Pinch of salt


RECIPE:

  1. Preheat your oven to 350° F and line a 12 tin muffin pan.

  2. Start by making your oat topping. Combine all of those ingredients together in a bowl and mix together until clumps start to form. Set aside while you make the muffins

  3. Cream or mix together your butter and sugar until light and fluffy. Mash your bananas and add them to your butter and sugar mixture along with the yogurt and vanilla. Mix everything until fully combined.

  4. Add in your flour, baking soda, baking powder, cinnamon and salt to the banana mixture. Mix until almost combined. Then add in your chocolate chips or walnuts if desired. Mix until just combined, do not over mix.

  5. Add about 2 tablespoons of the batter to each tin. Top with the oat topping. Repeat until you run out of batter. Bake at 350° F for 25-35 minutes.
